On Saturday morning, the sun rises over the square and everyone is already there. Strollers gaze upwards, strollers weave between the stalls, and children bury their noses in punnets of strawberries. The air is filled with the aroma of cafés on terraces and the delicious cheeses brought down from the mountains by the goatherds.

Every Sunday morning, the aroma of roast chicken wafts in even before you can see the market stalls. On the bridge, above the Volane River, seasonal vegetables are laid out in the sun while the river flows peacefully below. We have plenty of time to listen to the market gardener talk about his tomatoes and to sample a piece of sausage held out across the stall.

On Tuesday mornings, from May to September, the village square welcomes producers and artisans in the crisp mountain air. Here, people are quick to chat and always have a story to tell: the cheesemaker, the neighbor, the pétanque player glancing over the stalls between shots. You buy, you chat, you leave with a jar of honey and three anecdotes.

A hilltop hamlet, the sun gilding the stones, and the irresistible aroma of grilled sausages. Welcome to the Bise farmers' market, held every Wednesday evening in summer. Choose a Picodon cheese, a crusty loaf of bread, and head straight to the barbecues provided for a delicious meal. It's local, it's delicious, it's simple, and it often ends with a song.

Every Thursday evening in summer, Saint-Étienne-de-Boulogne sets up its tables and brings smiles to the air. The scents of bread, cheese, honey, craft beer, ratatouille, barbecue smoke, fries, and sausages fill the air. People stroll among the stalls, exchange a few words with the producers, and somewhere, a guitar or accordion begins to play. The evening light does the rest.

When July arrives, Wednesday evenings belong to the castle square. Artisan stalls set up at the foot of the ancient stones, terraces overflow, and the town adopts the slow, pleasant rhythm of beautiful summer evenings. You might pause to admire a handmade piece of jewelry, a ceramic, hesitate between two soaps, and leave with an ice cream that melts just right. No schedule, no plan: just a desire to linger a little longer.

The spa district is alive again. Just one avenue, but it's enough: handmade jewelry, ceramics, sculpted objects, and the local ice cream parlor with flavors you won't find anywhere else. Vacationers and locals mingle, people stroll, stop, and leave with their hands full. The savviest have thought to stop by the Sequoia Redwood Spa first, which closes at 20 p.m. Just enough time for a perfect evening.
