Distillerie Helvia

An Ardèche concentrated in a bottle, an alchemy of the spirit of tradition, the insubordination of youth and the ambition to produce responsibly, these are the ingredients that brought the Helvia distillery to life in an old farmhouse in 2019.
The distillery is based on the desire to produce spirits rooted in their territory, in order to reflect it and preserve the environment as best as possible.
The distilled ingredients are sourced as locally as possible to support Ardèche producers, thus reducing the distances traveled. Organic farming, or at least sustainable farming, wild harvesting, and the promotion of local resources guide the preparation choices.
So, no lemon zest in the gin, nor any future rum to hope for, but bottles that contain the best that the Ardèche and its surroundings have to offer.
The distillery operates with a 1935 still, fully restored after being doomed to destruction, which traveled through village squares for decades before landing in Ardèche.
There, thanks to its operation by injecting steam into separate vessels, we produce particularly soft and aromatic eaux-de-vie.
Thus, whisky, gins, absinthe and fruit eaux de vie rub shoulders in the vapors of the still and the patient aging in barrels or glass bottles.
The distillery operates primarily during the winter months and promotes local products sourced through short supply chains of organic farming, requiring patience to achieve a truly high level of quality. Our raw materials are produced on the farm or sourced within a 25km radius of the distillery.
